We’re looking for a young chef-explorer with a deep love for Indonesian gastronomy, someone who’s passionate about R&D, confident in turning ideas into plates, and courageous enough to speak those stories to the world.
Key Responsibilities:
Assist in designing and developing menu concepts rooted in regional Indonesian flavors and narratives
Conduct research in the kitchen and in the field, from traditional markets to local communities.
Test, document, and refine recipes and techniques with consistency and attention to detail.
Collaborate with the chef team to ensure smooth operations during Joongla dining sessions.
Maintain high kitchen standards; hygiene, organization, time discipline, and integrity.
Actively participate in sharing the story behind each dish during dining experiences when needed.
Qualifications:
Minimum 1 year of professional kitchen experience, or strong culinary school foundation.
Passionate about Nusantara gastronomy; past, present, and future.
Enjoys both fieldwork (ingredient hunting, cultural research) and kitchen R&D.
Strong creative craftsmanship: thoughtful, hands-on, and taste-driven.
Comfortable with public speaking and storytelling in front of guests or collaborators.
High integrity and ownership in craft, teamwork, and time.
Curious, committed, and open to constant learning.
